Zucchini "Zoodles"
Ingredients:
- 4 zucchinis
- 1/4 c. light Italian or Greek dressing
- 1/4 c. feta cheese, crumbled
- 1 c. cherry or grape tomatoes, halved
- 1/2 c. red onion, chopped
- 1 c. garbanzo beans or chickpeas
Directions:
- Shred zucchinis with vegetable peeler (or knife) to make thin strips or ribbons. These are your “noodles.”
- Mix tomatoes, red onion, feta, chickpeas, and dressing with your zucchini noodles. Toss to combine. Serve and enjoy!

Creative Ramen

- Green onions, chopped
- Canned peas and carrots
- Canned mushrooms
Directions
- Cover the ramen with water and boil. Add the seasoning packet, green onions, and canned vegetables. Boil together until the noodles are cooked.

Hearty Pasta Dish
Ingredients:
- 8 oz. 100% whole grain rotini
- 1 16 oz. jar tomato sauce (no salt added)
- 4 oz. white mushrooms, sliced
- 1 onion, sliced
- 2 zucchinis (1 green and 1 yellow), sliced
- 1 red pepper, sliced
- Garlic, chopped
- 1 hot chili pepper, chopped finely
Directions
- Set the oven to broil.
- Wash and prepare all of the fresh vegetables. Place the prepared vegetables in an oven-safe dish and broil for 15 minutes.
- While the vegetables cook, bring a pot of water to boil. Add the pasta and cook for 8-10 minutes. Drain the pasta and add it to a large bowl, along with the tomato sauce and broiled vegetables.
