Quick & Healthy Pizzas
English Muffin Pizzas
Ingredients:
- 6 whole-wheat English muffins
- 1 can pizza sauce
- 1 c. cheddar cheese, shredded
- 2 red bell peppers
- 1 c. pineapple, chopped
- Red pepper flakes
Directions:
- Slice the English muffins. Spread a tablespoon or two of pizza sauce on each half and add a sprinkle of cheese. Add about two tablespoons of the peppers and pineapple. If you like a little heat, sprinkle red pepper flakes on top.
- Bake pizzas in a 400°F oven until cheese is melted and muffins are toasted.

Cracker Pizzas
Ingredients:
- 4 large whole-wheat crackers
Version One: Veggie
- 1 oz. feta cheese
- Fresh spinach leaves
- 1/2 tomato, sliced
- 2 tsp. sesame seeds
Version Two: Tuna Melt
- 1 oz. cheddar cheese, sliced into 4 thin pieces
- 1/2 can tuna, drained
- 4 Tbsp. cooked sweet corn
Version Three: Dessert
- 1 oz. cheddar cheese, sliced into 4 thin pieces
- 1/2 apple, thinly sliced
- Cinnamon
Directions
- If using, preheat the oven to 300°F.
- If cooking in the oven, lay out 4 crackers on a baking sheet covered in non-stick paper. If microwaving, place the crackers on a microwave-safe plate.
- Lay cheese on top of crackers first if using cheddar, and then lay other ingredients on top of the cheese. If using feta cheese, place other ingredients on first, then crumble the feta over the top.
- Place baking sheet in oven for 5 minutes, or until cheese is melted. If microwaving, cook for 20 seconds on high.

Portobello Pizzas
Ingredients:
- 1 Portobello mushroom cap
- 1 Tbsp. marinara sauce
- Mozzarella cheese to taste
- Toppings to taste (sliced peppers, pepperoni, olives, onions, etc.)
Directions
- Bake portobello mushroom at 375°F for 5 minutes on a baking pan.
- Flip portobello mushroom cap on its head so the underside is facing up. Add marinara sauce, cheese, and toppings of choice. Place dressed mushroom in oven until cheese is melted and golden.
