Savory Sandwiches
Hummus, Peppers, & Halloumi Cheese
Ingredients:
- 1½ c. cooked black lentils
- 2 large eggs
- ¼ tsp. sea salt
- ½ onion, chopped
- ½ c. bread crumbs, toasted
- ½ Tbsp. extra virgin olive oil
- 6 whole-wheat hamburger buns
Directions:
- Combine lentils, eggs, and salt in a food processor and puree until the mixture has the consistency of hummus. Pour into a mixing bowl and add the onion and breadcrumbs. Stir and let sit for several minutes, until the breadcrumbs have absorbed some of the moisture. Form into six patties.
- Heat olive oil in a skillet. Cook the patties in the pan, flipping periodically until both sides are brown. Serve on the whole-wheat buns.

Lentil Burgers
Ingredients:
- Whole-wheat bun
- 1.5 oz. Halloumi cheese
- 1 tsp. olive oil
- 8 spinach leaves
- ½ sweet bell pepper, sliced
- 2 Tbsp. light hummus
- Garnishes/spices
Directions
- Prepare bun by slicing and toasting if desired.
- Spread 1 Tbsp. light hummus on each side.
- Lightly brush each side of the halloumi with olive oil. Cook halloumi in a pan over medium heat, about 2-3 minutes per side. It is done when it is lightly browned on each side.
- Meanwhile, sauté pepper slices. They should still be crispy, cooked 2-3 minutes per side.
- Place spinach leaves on one side of the bun. Add halloumi and peppers. Sprinkle with desired garnishes and/or spices. Put both sides of bun together and enjoy!

Chicken Cutlet Sandwich
Ingredients:
- 1 Chicken breast
- Breadcrumbs
- Cumin powder
- Tomato sauce
- Shredded cheese
- Bun or bread
- Vegetable or coconut oil
Directions
- Combine breadcrumbs and cumin powder in a small dish. Coat the chicken breast with the breadcrumb mixture.
- Heat the oil in a small pan. Cook chicken breast until browned on both sides.
- Top the chicken with some tomato sauce and shredded cheese. Bake until the cheese is melted and the chicken is cooked through.
- Serve the chicken cutlet on your favorite bun or bread!
