Sweet breakfast, hold the sugar
How to take the sugar out of breakfast without compromising on taste? Our cooks found three sweet solutions to this urgent 21st century challenge.
Broiled grapefruit
Ingredients
- ½ grapefruit (I like Ruby Red variety, but any will work!)
Topping: a few slices of strawberries or banana,
or a handful or blueberries/raspberries
½ cup of natural yogurt (preferable Greek for higher protein content) sprinkle of cinnamon or ground ginger tablespoon of nuts—pecan or walnut pieces are best
optional: a drizzle of honey
Directions
Wash the grapefruit and slice it in half (down the middle, not the axis). With a knife, slightly separate the pulp from the peel inside the grapefruit halve, and gently separate the sections from one another. Top with fruit slices, sprinkle with cinnamon or ginger, place the grapefruit half on a baking tray/foil, and put it in the oven under the broiler for 5 minutes. Plate the grapefruit next to ½ cup of plain yogurt, topped with a sprinkle of nut pieces. Eat with a spoon.

Naturally sweet oatmeal cookie pancakes*
Ingredients
For pancakes:
- 1 super ripe banana (the riper, the better)
- 1 tsp. baking powder
- 1 egg
- ¼ tsp. salt
- ½ tsp. vanilla
- ¼ tsp. cinnamon
- 1 Tbsp. peanut or almond butter (or other nut butter, depending on your preference)
- 1 Tbsp. unsweetened applesauce
- 3 Tbsp. milk (almond, soy, skim, etc.)
- ½ cup rolled oats (not the quick cook kind)
- ¼ cup whole-wheat flour
- ¼ cup of raisins (optional)
For topping:
- Sliced strawberries or other fruit
- ¼–½ Plain Greek yogurt
- ½ Tbsp. almond butter, warmed in microwave
Directions
Mash banana with a fork and add baking powder to the mash. Mix in egg, salt, vanilla, cinnamon, nut butter, applesauce, raisins, and milk. Add oats and flour. Don’t over stir. Pour onto hot skillet and cook until slightly brown on each side. Don’t have an oven? You can bake these in a toaster oven. Set it to cook or bake setting and bake at 350° for 15-20 minutes. Top with dollop of plain Greek yogurt, a drizzle of warmed nut butter, and some berries.

Waffle-wich
Ingredients
For sweet option:
- Toaster oven whole grain waffles
- Almond butter or peanut butter
- Seasonal fruit slices (try bananas, blueberries, and strawberries)
For chai tea:
- 1 tea bag of chai tea
- 1 cup unsweetened vanilla almond milk
- ½ tsp. vanilla extract
- 1 tsp. cinnamon
For savory option:
- Toaster oven whole grain waffles
- Reduced sodium turkey
- cheddar cheese
- apple slices
- mustard
Directions
For wafflewich:
Toast your frozen waffles. Once you have them out of the toaster, top with either the savory ingredients, or the sweet ingredients listed above (or try creating your own combinations)! Place 2nd waffle on top like a sandwich.
For chai tea:
Place almond milk, vanilla extract, and cinnamon in microwave for 2 minutes using a microwave safe mug. Place chai tea bag in mug.
