Acai Berry Bowl

2 packs Sambazon Original Acai
1/4 cup frozen raspberries
2 tbsp nonfat Greek yogurt
2 tbsp Almond milk
1 banana, sliced
Raw, unsalted almond slices, to taste

Directions
Blend the acai, raspberries, yogurt,and milk. Serve in a bowl and top with banana and almond slices.

Frozen Yogurt Fruit Pops

1/3 cup nonfat Greek yogurt
3 popsicle sticks
One of the following fruits:
3 fresh strawberries
1 banana, cut into 3 pieces
1 peach, pitted and sliced
One of the following nuts:
1/4 cup pecans, chopped
1/4 cup walnuts, chopped

Directions
Gently press a popsicle stick into each piece of fruit. Dip each piece of fruit into the yogurt, then roll into the chopped nuts. Transfer to a plastic container lined with parchment paper. Freeze the pops until they are frozen and ready to serve.

Frozen Chocolate and Peanut Butter Covered Bananas

1 banana
9 hardening chocolate pellets
1 tbsp peanut butter

Directions
Cut the banana into five or six slices. Add the peanut butter and chocolate pellets into a microwave-safe bowl. Microwave for 30 seconds and stir every 15 seconds.

Insert a toothpick into each piece of banana and dip into the chocolate and peanut butter mixture. Once covered, place on the wax paper. After dipping all of the banana pieces, freeze for one hour.

Strawberry Smoothie

Low-fat strawberry yogurt, about 1 cup
1 banana
Strawberries, fresh or frozen, about 6 berries
1/2 cup 1% or fat-free milk

Directions
Add yogurt, 1/2 cup milk, banana, and strawberries into a blender. Blend for a few seconds. Add ice if the mixture is too warm or milk if its too thick. Blend until smooth.

Chia Seed Pudding

1 tbsp raw organic chia seeds
1 cup organic vanilla soymilk (or almond milk)
Optional: add berries, sliced fruit, and/or honey

Mix the ingredients together and store in a refrigerator for at least 30 minutes. Then take it out and enjoy! The chia seeds with soy/almond milk form a kind of gel substance, and chia seeds are incredibly healthy. They have protein, fiber, and omega-3 fatty acids that help boost brain activity, prevent joint inflammation, and many other health benefits. Plus, this recipe is super quick and easy to make!

Banana-Oat Treats

3 ripe bananas
2 cups rolled oats
1 cup dates, pitted and chopped
1/3 cup vegetable oil
1 teaspoon vanilla extract

Preheat oven to 350 degrees F (175 degrees C). In a large bowl, mash the bananas. Stir in oats, dates, oil, and vanilla. Mix well and allow to sit for 15 minutes. Drop by teaspoonfuls onto an ungreased cookie sheet. Bake for 20 minutes in the preheated oven, or until lightly brown.

No-Bake Chocolate Oat Bars

1 cup butter
1/2 cup packed brown sugar
1 teaspoon vanilla extract
3 cups quick cooking oats
1 cup semisweet chocolate chips
1/2 cup peanut butter

Directions
1. Grease a 9x9 inch square pan.
2. Melt butter in large saucepan over medium heat. Stir in brown sugar and vanilla. Mix in the oats. Cook over low heat 2 to 3 minutes, or until ingredients are well blended. Press half of mixture into the bottom of the prepared pan. Reserve the other half for topping.
3. Meanwhile, melt chocolate chips and peanut butter in a small heavy saucepan over low heat, stirring frequently until smooth. Pour the chocolate mixture over the crust in the pan, and spread evenly with a knife or the back of a spoon.
4. Crumble the remaining oat mixture over the chocolate layer, pressing in gently. Cover and refrigerate 2 to 3 hours or overnight. Bring to room temperature before cutting into bars.

Strawberry-Buttermilk Gelato

2 cups sugar
2 cups water
5 cups quartered strawberries (about 4 pints)
2 cups low-fat buttermilk

Combine sugar and water in a large saucepan; bring to a boil, stirring until sugar dissolves. Pour into a large bowl; cool completely. Place strawberries in a blender, and process until smooth. Add strawberry puree and buttermilk to sugar syrup; stir to combine. Pour the strawberry mixture into the freezer can of an ice-cream freezer, and freeze according to the manufacturer's instructions.

Avocado on Wheat Thins

My favorite healthy dessert is simple and delicious. The recipe calls for a box of original Wheat Thins and a single ripe avocado. Cut the avocado into small pieces and scoop the pieces up with a Wheat Thin and take a bite.

Grilled Peach Melba

Halve, peel, and pit peaches. Grill them over low charcoal fire until softened, and they get a caramelized outer layer. Top while hot with low-fat vanilla ice cream or fat-free whipped topping. Drizzle with raspberries pureed in a blender and strained to remove seeds. Trust me chicks are thoroughly impressed.
